Spicy Cauliflower Po’ Boys
A Great End of The Week TreaT!
I first discovered this recipe, when I was trying to find some new and exciting vegetarian recipes. I’ve never had Po’ Boys before. But now I’ve discovered them, I love them! This recipe comes from one of my favourite food blogs Love & Lemons. I have her cookbook and I’m desperate to get my hands on her second one.
These spicy cauliflower Po’ Boys are so delicious. Now, this is definitely a treat meal. You are not going to be having these once a week. Think of this recipe as something quick any easy you can whip up and have on the weekend or on a Friday after work. That special comfort meal that you’re so looking forward to. Really, most of your time is going to be in breading up the cauliflower, which is something you can prep the evening before and keep in the fridge.
Also, you don’t have to display the spicy cauliflower Po’ Boys in a tin dish as I’ve done. But honestly, it gives that street food vibe, so you can feel like you’re eating out from the comfort of your home. Plus, you lovely lot were loving how they looked on Instagram, so why not get stylish with your food and show it off!
INGREDIENTS.
(serves 2)
3/4 cup of bread crumbs (ideally panko)
1 1/2 tbs peri seasoning
1 lemon
2 eggs
1 cauliflower
spinach
plum tomatoes
1 french baguette
1/2 cup mayo
1 tbs mustard
2 tsp ground garlic
1/2 tsp paprika
1 tbs hot sauce (depending on your spice level)
salty crisps (optional)
SPICY CAULIFLOWER PO’ BOYS.
Preheat your oven to 200C and line a baking tray with paper. In a bowl, mix together, the bread crumbs and peri seasoning. Zest your lemon and add to the bowl. Then, crack the eggs into a small bowl and beat.
Get your cauliflower and chop into small 1 inch florets. Dip each floret into the egg and then coast into the bread crumb mixture. Place onto the baking sheet. Next, drizzle the cauliflower with a little olive oil and place into the oven. Bake for 20 minutes until crispy and golden brown.
Whilst cooking, in a small bowl, mix together the mayo, mustard, garlic, paprika and hot sauce. Set to one side. Next, start assembling the sandwiches. Cut your baguette into sandwich sizes. Cut in half and add the spinach, tomatoes and drizzle a little spicy mayo.
Once the cauliflower has been cooked to perfection, take out of the oven and give a minute. Add to the sandwiches and squeeze a little lemon juice over it. Top with more of the sauce (depending on how you like your spice). Serve with a handful of crisp for that comfort food treat. Relax, unwind and enjoy!
