Time to Channel Your Inner Jane Adler…

Those who know me well know that It’s Complicated is my comfort film. And because of that, I knew I needed to add lavender honey ice cream to my list of recipes to have in my book. I got a Ninja Creami ages ago as part of a brand partnership, but haven’t used it in a while.

That’s why I have decided that 2024 is going to be the year of homemade ice cream and the lavender honey ice cream was the first one to try out. Made by the beloved Jane Adler when she can’t sleep, this boujie-sounding flavours sounds a lot more complicated than it is.

The most complicated part was sourcing editable lavender. Turns out with enough searching you’ll find them and not I have a surplus of them. With that, expect me making more of this ice cream throughout the summer and also some other lavender-flavoured recipes coming to the blog.

Lavender Honey Ice Cream

This recipe is ideal for late summer evenings. I’m picturing myself like a main character in a film eating this. Outside in our courtyard. Enjoying it with a fire pit going and a glass of white non-alcoholic white wine. I’m also imagining this will be delicious enjoyed early Autumn snuggled up in bed.

The trick with this is balancing the flavours. You don’t want it too fragrant of lavender so that’s all you taste. At the same time, you also don’t want too little that you wonder why you even added it. The honey is perfect for balancing these flavours.

Lavender Honey Ice Cream

Ingredients

  • cups double cream
  • cups whole milk
  • ½ cup honey
  • 2 tbsp dried lavender buds
  • pinch of salt

Instructions

  • Add the double cream, milk, honey and lavender to a medium saucepan over medium heat. Stirring occasionally, cook until the lavender cream is fragrant and the honey has fully dissolved. 
  • Remove the base from heat and add in a pinch of salt. Allow to cool for 10-15 minutes. Strain the mixture and chill the cream mixture of 24 hours.
  • Once chilled, add mixture to an ice cream maker and process according to manufacturer’s instructions. Once churned serve and enjoy!
