Grilled Artichoke & Pesto Grilled Cheese Toastie
Elevating a Basic Lunch to the Next Level…
I love a good bit of comfort food like a grilled cheese toastie. However, if I’m going to have one, I want an elevated version of it. Taking that little bit of extra time, using some different ingredients to create the ultimate experience. This is where grilled artichoke & pesto grilled cheese toastie comes in.
This was something I played around with and absolutely love it. A mixture of crunch from the broccoli with the smooth creaminess of the brie. This delicious grill cheese toastie is exactly what you want when you’re craving a little comfort. The best thing is, this recipe is customisable. You can use any veg you like really.

INGREDIENTS.
1 tbs grilled artichokes
1/2 cup of tender stem broccoli
2 tbs greek yoghurt
1 tsp rosemary leaves
1 tsp chilli flakes
2 tbs green pesto
6 slices brie
extra virgin olive oil, for brushing
sliced sourdough
honey, for drizzling
salt & pepper for seasoning
GRILLED ARTICHOKE & PESTO GRILLED CHEESE TOASTIE.
In a bowl, combine the artichokes, broccoli, yoghurt, rosemary, chilli flakes and a pinch of salt & pepper. Slice your sourdough and rub the outside generously with olive oil. Spread the basil pesto on the inside of the piece of bread.
Layer the brie on top and then add the artichoke mix. Drizzle a little honey over the top and sprinkle some black pepper. Add the top piece of the bread.
Use either a skillet pan or panini press. For this, I used a skillet on medium-high heat. Place in the sandwich and gently press. Cook until the cheese starts to melt. Once it starts to slightly melt, flip the sandwich and cook until completely melted.
Serve the sandwich by cutting it on an angle and drizzle with more honey. Eat warm.
